HexClad Double Burner Griddle: Is It Worth the Hype?

The cook
I put the HexClad double burner griddle to work making hibachi beef fried rice. First the velveted beef goes on, about a minute per side. You want it seared, not cooked all the way, because it finishes in the rice.
The best thing about this griddle is all the surface area. You don't have to crowd the pan, which is huge when you're searing beef. Crowd it and nothing cooks right. On this, it's absolutely perfect.
Then the onions and carrots go on with a little water to steam them, plus garlic. Then the rice. I didn't have enough day-old rice, so I made a little extra. Then eggs, soy sauce and butter, and I chopped everything together with my hibachi spatulas. You can use metal utensils on this pan, so don't worry about that part.
Last, the steak goes back in. I finished mine with some chili crunch for spice. Absolute perfection.
What I liked
- Tons of room to cook. Searing a whole batch of beef without crowding the pan.
- Metal utensils are fine on it.
- One pan for the whole meal, from the beef to the fried rice.
Heads up
- It takes up two burners, so plan your stovetop around it.
Key specs
From HexClad and what I show in the video:
- Hybrid surface that mixes stainless steel and nonstick
- Spans two burners
- Safe for metal utensils
- Dishwasher safe and works on gas, electric and induction
Who it's for
Anyone who cooks for a family or likes doing hibachi, pancakes or smash burgers at home. If you mostly cook for one or two, a regular 12-inch pan will cover you.
My take
It's really good. If you want to cook big batches without crowding the pan, this is the one.

Lodge Reversible Cast Iron Grill/Griddle
Haven't tested itA double burner griddle in cast iron, with a grill side on the back. It's heavier, has no nonstick, and you have to keep it seasoned.
